It seems Poke (pronounced Poke-EH) has popped up all over Madison lately! And for good reason - Poke is a Hawaiian dish that is packed with flavors, and typically healthy too. Traditionally with raw fish, this vegetarian version features marinated tofu (or you can opt for shrimp variation). You will first dry and marinate the tofu (or shrimp) in sesame oil, soy sauce, and chili garlic paste. Then you will serve it over jasmine rice with fresh avocados, carrots, mini cukes, and pineapple.
